You are less likely to eat Oreos at 10pm if they are on the shelf of a supermarket and not on the shelf in your pantry. Don't tempt yourself and fate by buying lots of snacks with the thought that you won't overindulge. Stack the odds in your favor by making bad food choices less convenient. This is a good way to start getting out of the habit of mindlessly snacking at night.
